Dr. Liu’s current research interests include (1) value-added use of agricultural and food byproducts; (2) nanocellulose, nanoencapsulation, nanoemulsion; (3) simulated in vitro food digestion and nutrient absorption; (4) biobased materials including coating/films; (5) Novel food product development and food shelf life enhancement.
